Converting an ArcGIS file to ASCII with QGIS should be relatively straightforward.
However, manipulating the output can get complicated (changing projection, filtering out unwanted values, changing units, etc...). This makes us resort to other tools like Python to post-process the output.
It would be nice to convert these files via the plugin and have some options for manipulating the output.
