I've been having a go at this one. I think I have got the code working so that the collapsible option works with a standard UI menu. The code is available (not well documented atm) in https://github.com/ashbaldry/shiny.semantic/tree/navbar_page

Can't seem to record the transitions, but here's a couple of screen grabs:
