Update immer to 8.0.1 to address vulnerability

Looks like there is the following blocker

react-scripts@4.0.0 requires immer@7.0.9 via a transitive dependency on react-dev-utils@11.0.1

There seems to be a currently standing PR here to address this, but it has not passed checks or been reviewed yet.

We'll just need to keep an eye on this one
