- 1lb Knockwurst || Kielbasa
- 2 Carrots
- 2 cloves || 1tsp Garlic
minced
- 1 Vidalia Onion
thinly sliced
- 2 Russet Potatoes
large diced
- 3tsp Dijon Mustard
preferably whole grain
- Salt, Pepper
- Olive Oil

Heat 1tbsp of
olive oil
on medium-high until hot. Addgarlic
and cook until lightly browned. -
Add
potatoes, onions, and carrots
. Cook, stirring frequently until slightly softened. -
Add the
knockwurst
and 1 3/4 cups of water. Season withsalt
andpepper
. Cook, stirring occasionally, 20 minutes or until liquid has reduced in volume by about 3/4. Remove theknockwurst

Add 1/2 of the
mustard
to the vegetables, stir until combined and remove from heat. Season withsalt
andpepper
. -
Add 1 tsp of olive oil to a pan and heat on medium-high. Add the
knockwurst
and cook on each side until crispy.
