[All connectors] Update all connectors to be aligned with confidence level changes

Use case

Since confidence level will come from user settings, confidence level configurations need to be removed from all connectors config.yml file and docker-compose.yml file. If a connector uses it, it needs to be removed from the code and replaced with a dedicated configuration variable.
