♻️ Automate process of adding fields to the written SharePoint list

As raised by @calumjs, The SharePoint lists that Dory currently reads + writes to for Dev + UAT + Prod environments has its columns manually updated. If this is to be released to the public, it would be best to have a DevOps situation that can update these fields automatically in all 3 places.
