Specify channels for the "Audio Encoder AC3" plugin, or/and specify channels for the "Normalise AAC Audio Streams" plugin

Is your feature request related to a problem?

I'm trying to create a flow where I end up with 5.1 or 8.1 audio in AC3 format, and add AAC stereo sound that is normalised.
Can't seem to do that using the current plugin setups unfortunately.

What is your feature request?

I want to be able to specify what audio channels streams should be converted with the "Audio Encoder AC3" plugin.
This would allow to have Surround sound in AC3 while having Stereo sound in AAC that can be normalised by the "Normalise AAC Audio Streams" plugin.

Are there any workarounds?

Would probably also be a generally good idea to add the option of specifying channels to the Normalise plugin as well. Would allow workarounds as well.
