Rebalance inputs follows to prefer nixos over latest for increased stability #337

Many inputs follow latest, maybe as a result that we started with 20.09 and some things where not compatible.

Maybe it is time to rebalance towards usage of 21.05 in order to increase stability and cache hits after doing nix flake update ?
