Gaffer has varying levels of support for different backing stores. A minimal implementation for HBase was created several years ago, principally to demonstrate that Gaffer is not tied to Accumulo. However, this has not received any development effort in three or four years, other than preventing tests from failing.
As nobody appears to have any interest in Gaffer+HBase and we have no support effort available, this store will not be available in Gaffer 2.0.
