Description

Following up on #17554, the option to configure Layout Parser and Chunking in Data Stores recently became available in v1.

This translates to:

• Add a chunking_config argument in document_processing_config
• Add a layout_parsing_config argument in the ParsingConfig model, which is used in default_parsing_config and parsing_config_overrides
