Documentation Title Formatting and Stable Release

Description

In the latest version of the documentation, the title is overlapping the top menu bar. Also if you select stable from the read the docs flyout, it was released 2 years ago, so it doesn't seem like the 1.2.0 release updated the docs.

1. Go to https://nbclassic.readthedocs.io/en/latest/nbclassic.html
2. See title overlapping top menu:

Expected behavior

A shorter title that just says Jupyter NbClassic.

https://nbclassic.readthedocs.io/en/stable/nbclassic.html should be updated to the latest stable release.
