Analytics about visits

Have an analytics module follow visitation of pages. Not google, rather sth OSS e.g.: https://matomo.org/.

• Plausible?
• Have KSZK set domain for new blog
• Create a simple alert for cookie and tracking warning (maybe a small policy page)

All right I've put it out of the first release milestone, but this should be the first issue solved after first release

I feel like this should be done before the first release, since it'd be nice to have user data from the start.
