Splitting up the app workload for the v5 removal into separate issues incase for easier tracking.

Remove the v5 version of the REST API and update the REST API docs to indicate that v5 has been removed and v6 is now the only REST API version.

This might require some database migrations, such as removing some old node fields only used for v5.
