Chocolate coconut slice

So delicious, so crumbly, and so easy to make!

Ingredients

Cake base

  • 150g butter, melted and cooled
  • 1 cup brown sugar
  • 1 egg, lightly beaten
  • 1 tsp vanilla extract
  • 1/2 cup plain flour
  • 1/3 cup self-raising flour
  • 1/4 cocoa powder
  • 1/2 desiccated coconut

Icing

  • 1 1/2 cups icing sugar
  • 1/4 cup cocoa powder
  • 20g butter, finely chopped
  • 1 tbs boiling water
  • 2 tbs desiccated coconut (for sprinkling)

Instructions

  1. Preheat oven to 160 degrees fan-forced
  2. Place butter, sugar, egg, and vanilla in a bowl, stir until combined
  3. Sift flour and cocoa into bowl, add the coconut, stir until mixture is combined
  4. Spread mixture evently into a greased and lined baking pan. Bake for 25-30 minutes or until just firm
  5. To make the icing, sift icing sugar and cocoa into bowl
  6. Add butter and boiling water, stir together
  7. Spread warm slice with icing
  8. Sprinkle remaining coconut over slice
