The openjdk docker images are being deprecated, and will not receive security updates after July 2022 (ref). Therefore, we should switch our base image to one that will continue to receive security updates for jre 11 images. One popular choice is eclipse-temurin (ref). They have both Ubuntu and Alpine flavors that are similar in size to the openjdk slim images.
