Updating this library as it's only been 6 years that we've been using it consistently and in some scenarios it's now broken

• Fixes/updates
  • No longer dependent on Newtonsoft - all System.Text.Json all the time now.
    • This resolves issues in newer ASP.NET Core apps and makes stuff zero-config again
  • Endpoint routing for UoN.AspNetCore.VersionMiddleware Consider an EndPointRouting extensions package UoN.AspNetCore.VersionMiddleware#19
• Docs updates:
  • Clarifying source in app.UseVersion(source) is optional UoN.AspNetCore.VersionMiddleware#18
