Remove api symlink deletion step from CI workflow

The symlink for ArduinoCore-API in the Mbed OS Boards core library has been removed (arduino/ArduinoCore-mbed@ca397e8). This resulted in the step of the "Compile Examples" CI workflow that removes the now non-existent symlink to fail.

Even though the CI still fails, I believe this is a legitimate failure, rather than a misconfiguration of the workflow.

Even though the CI still fails

I notice that the compilation errors for the arduino:mbed boards are fixed by using the default branch of ArduinoCore-API rather than the namespace_arduino branch. However, the arduino/ArduinoCore-mbed installation instructions explicitly say to use namespace_arduino branch:
https://github.com/arduino/ArduinoCore-mbed#installation

Then clone https://github.com/arduino/ArduinoCore-API in a directory at your choice. Checkout namespace_arduino branch.

Maybe a documentation update was neglected?
