This is blocked because the the eslint-config-airbnb-typescript package specifies a peer dependency on 7.x:

UPDATE: Previously, I had intended to simply wait until a compatible version of the eslint-config-airbnb-typescript package was released. Unfortunately, I see that since the time I wrote this review the eslint-config-airbnb-typescript project has been archived. So there is no hope of a compatible version and it will be necessary to take some action in the arduino/setup-task in order to update @typescript-eslint/parser.
The next most simple solution would be to use an actively maintained hard fork of the package. I haven't done a comprehensive survey, but I did see there is at least one:
