Is there a way, after doing a bootc switch but before reboot/apply, to access a named file in the new image?

The short answer is yes, but are you looking for #640 ?

not quite. I want to pull a statically linked binary out of the new image and run it in the old image before rebooting. copying the whole image to a container to start it to just copy the one file out would work, but is maybe more effort/slower then the need to copy the one file out.

In #640 we would definitely not do any copying before spawning a container.

It is possible to find the current filesystem trees in /ostree/deploy/<stateroot>/<hash>.0 but this is an implementation detail that may change.
