feat: impl larger buffs for FunctionCall on nanosp and nanox

for nanosplus and nanox, buffers for FunctionCall display are increased:
CappedString<200> -> CappedString<1000>
HexDisplay<200> -> HexDisplay<1000>

This has been tested to work ok, just a longer payload has to be made for https://github.com/dj8yfo/app-near-rs/blob/develop/tests/test_sign_transaction/test_function_call.py#L15-L20 test to illustrate case with payload truncation, and test snapshots updated ...

this can be picked up at a later time
