Update touch pin lists.
This was added upstream at espressif#5521 and does nothing practical. However, it DOES cause CI to wait for a long time for a matching self-hosted runner.

@me-no-dev we ship to the EU all the time :) we should have the QT Py ESP32-S2 in stock in the next week or two - if you can remember, ping me when you see them released & we can get you one |

we're making many more esp32-s2 boards - here's some fixes and new definitions
