[exupdates][ios] Convert more tests to swift #21471

Why

Now that these classes have been converted to swift and shown not to break their tests, we can convert their tests.

Manually convert

Run tests.

Documentation is up to date to reflect these changes (eg: https://docs.expo.dev and README.md).
Conforms with the Documentation Writing Style Guide
This diff will work correctly for expo prebuild & EAS Build (eg: updated a module plugin).
