read-time.html wording for longer posts

I noticed that when the read-time include calculated the number of minutes to read a post, it uses "minutes" to describe anything over 1 minute. This makes sense, but isn't what I want because it goes on to say "read."

The result is that anything that is 1 minute will display correctly as "1 minute read" and anything over that will have some awkward wording that looks like "2 minutes read". Being new to jekyll I'm not really sure if this is done in theme or jekyll, but I was wondering if somebody could point me in the right direction to change how it handles this.
