I tried to move a specialisation to the top of the boot list by setting boot.loader.systemd-boot.sortKey = "0" (new in 24.05) inside the specialisation configuration. However, this seems to do nothing with lanzaboote active.

The option added in #359 doesn't fix this issue. The specialisation seems to always inherit the main configuration's sort key even if it's overridden in the specialisation config.
