This PR adjusts the Blockly documentation to refer to GraalJS as the standard scripting engine, and updates the migration instructions in the documentation.
I removed some of the history part, as I feel it is less relevant for a user to understand now that the standard is GraalJS, just keeping it to what I feel is needed to understand what to do. But feel free to comment and adjust if you want.
