Unable to set custom headers

Please revert the change that sets the headers instead of updating them, it is ignoring my custom headers which is set in the client:

You need to show example of what you are referring to. This change is to prevent sharing mutation of client options incase it is shared between two clients.

using the SyncClientOptions with headers no longer works correctly.

I expect that when making requests using the client that it will attach the custom headers, it no longer does.

also that PR is making changes to the way the authorization headers are being updated in the async client which seems fishy to me, it's probably worth double checking that that's correct. I am obviously not a maintainer so take my intuition with a grain of salt.
